Adjika-style cucumber-tomato seasoning

Firstly, this is not adjika, but only variations on its theme. Secondly, this seasoning is prepared simply and moderately quickly. Thirdly, the recipe is basic and you can improve the taste of this seasoning yourself. You can use pre-baked garlic and bell peppers, add your favorite spices and herbs (chili pepper feels especially good here), but in general, the dish turns out - fire! This seasoning is good to serve with meat or grilled fish, or you can simply eat it with bread or even unleavened waffles.

Adjika-style cucumber-tomato seasoning
Ingredients
  • 1.2 kg of fleshy tomatoes, better brown
  • 600-700 g sweet pepper
  • 100 g of brown sugar
  • 100 ml apple cider vinegar
  • 120-140 ml odorless vegetable oil
  • 1.5-2 tablespoons of salt
  • 2.5 kg of strong juicy cucumbers
  • 2 heads of young garlic
  • grated zest of half a lemon, optional

STEP-BY-STEP COOKING RECIPE

Step 1
Tomatoes are best blanched to get rid of the skin. Together with colored pepper (without seeds and partitions), pass through a meat grinder.
Step 2
Add sugar, oil and salt. Transfer to a heavy-bottomed saucepan and simmer over medium heat, stirring for 8 minutes.
Step 3
Cut the cucumbers into small cubes (with or without seeds, if desired). Add to pot. Cook for another 5 minutes.
Step 4
Cut the garlic into slices. Reduce heat and add to saucepan along with vinegar and zest, if desired. Warm up for 3-5 minutes. Remove from heat, chill slightly and place in sterilized jars, roll up and store in a cool place.
