Black currant cream
In the English version, this cream is called curd. Usually this dessert is made from lemons, but from black currant it turns out to be no less expressive. Prepare a jar of cream and add it to your morning oatmeal, yogurt, cottage cheese, or use as a filling for tartlets.
Ingredients
- 300 g fresh black currant
- zest and juice of half a lemon
- 50 g butter
- 100 g of sugar
- 2 eggs
STEP-BY-STEP COOKING RECIPE
Step 1
Place the black currants in a saucepan with 2 tbsp. water. Put on low heat and cook for 5-10 minutes, until the berries burst.
Step 2
Add sugar, butter, lemon juice and zest to the berries, stir until the sugar dissolves.
Step 3
Beat the eggs lightly and pour into the saucepan with the berries. Simmer the cream over low heat for 30-35 minutes until thickened, stirring constantly.
Step 4
The readiness of the cream is determined as follows. Dip a dry tablespoon in the cream and swipe the strip on the back side, if the strip does not tighten, the cream is ready. Store in refrigerator for up to 2 weeks or freeze.
