Lokma are fried balls of dough that are dipped in syrup as soon as they are removed from the boiling oil. Many centuries ago they began to be prepared in the Sultan's palaces themselves. Now, on the streets of Istanbul, this is a popular fast food, which is served with a variety of fillings and toppings, covered with nuts, cookies and chocolate.

Ingredients
  • flour 2 cups
  • yeast 1 tbsp
  • sugar 1.5 cups
  • salt 1/2 tsp
  • 2 cups water
  • lemon 1 tbsp.
  • honey 1 tsp
  • vegetable oil 3 cups
  • pistachio

STEP-BY-STEP COOKING RECIPE

Step 1
While the dough is rising, prepare the syrup. To prepare it, mix 1.5 cups of sugar and 1 cup of water. Bring to a boil to dissolve the sugar, add honey and a teaspoon of lemon juice. Mix everything and let it boil for 5-8 minutes. Then cool.
Step 2
After the dough has risen, it must be mixed again. To fry the lokma, pour oil into a heavy-bottomed pan and heat over medium heat.
Step 3
In order to form the balls, a hand smeared in oil and a tablespoon are used. Take a piece of dough in your hand, and in another spoon greased in vegetable oil. Squeeze the adze in a fist so that a small ball forms between the thumb and forefinger, and with a spoon, remove this ball and throw it into the hot oil. Do this with the whole dough, constantly lubricating the spoon in oil.
Step 4
Fry until golden brown, constantly turning the balls over. When the lokma is ready, take them out with a slotted spoon, let the excess oil drain and immediately dip in the syrup for 3 minutes.
Step 5
Traditional lokma is watered with syrup and garnished with pistachios. You can also decorate them with all kinds of toppings, nuts, coconut or chocolate.
