Kozinaki (from sunflower seeds)

Did you know that "gozinak" is an original Georgian dessert? Moreover, in the original version, kozinak is presented from a mixture of crushed walnuts and liquid honey. Hazelnuts and sesame seeds are also used as a secondary additive. Pressed sunflower seeds in candied syrup are already a popular Slavic version of Kozinaki. I am periodically drawn to buy this oriental sweetness, but each time one moment stops me: the sugar sweetness of the product. Alas, even a high-quality industrial kozinak is 40-50% refined sugar. But even then, there is a healthy home alternative! Banana-based seeds and nuts will surpass store-bought sweetness at times. Unexpected, but true. Try it too.

Kozinaki (from sunflower seeds)
Ingredients
  • sunflower seeds 220 g
  • sesame seeds 20 g
  • banana 1/2 pc.
  • sunflower oil (unrefined) 1 tbsp.
  • honey 100 g
  • ground cinnamon pinch (s)

STEP-BY-STEP COOKING RECIPE

Step 1
Peel and puree half of the banana.
Step 2
Add butter, honey, pre-dried seeds and spices to the banana puree (optional).
Step 3
On a baking sheet lined with parchment, spread the mixture evenly (about 0.8-1 cm thick).
Step 4
In an oven preheated to 120 ° C, bake future kozinaki for about 60-70 minutes (until amber color), then let cool, cut into pieces and use as energy bars.
