Adjika with sweet pepper
We know several varieties of Adjika. Adjika is widespread in the south of Russia, which is also called "Ogonyok" - in addition to pepper, garlic and salt, it contains tomatoes. And this adjika is more "strict".
Ingredients
- 1 kg red chili
- 2-3 sweet red peppers
- 2-3 heads of garlic
- 1 bunch of parsley, cilantro and celery
- 30 ml wine vinegar
- 0.5 tsp freshly ground coriander
- 200 g medium-ground non-iodized salt
- vegetable oil
STEP-BY-STEP COOKING RECIPE
Step 1
For sweet and hot peppers, remove the stems and seeds by cutting the peppers in half. For a really spicy adjika, leave the seeds in the chili.
Step 2
Spread the peppers on wire racks in the oven and dry at 60–70 ° C, 2-3 hours.
Step 3
Dry the herbs and chop. Peel the garlic.
Step 4
Rotate all prepared foods through a meat grinder, add coriander and salt, pour in the bite, mix thoroughly with a wooden spoon. Leave to infuse for 48 hours, stirring the adjika from time to time.
Step 5
Spread adjika in jars, pour a thin layer of vegetable oil on top and close with lids. Store in a cool, dark place.
