Antep paste

Traditional Turkish cold appetizer, usually spicy or very spicy. It is prepared from fresh vegetables with the addition of oil, vinegar, salchi and hot pepper. At the same time, "esme" literally means "crushed" - this is also related to the consistency of the snack - it is close to pasta. Ezme, a traditional "appetiser", perfectly refreshes and stimulates the appetite before a rich Turkish meal. I did not grind until smooth, I wanted to get small pieces.

Ingredients
  • large fleshy tomatoes 3 pcs.
  • medium cucumber 1 pc.
  • red or green thin hot pepper (sivri-bieber, but preferably hot) 1 pc.
  • chili pepper To taste
  • salt
  • 1/2 bunch parsley (s)
  • olive oil 2 tablespoons
  • vinegar 1 tbsp
  • dried mint 1 tsp.
  • tomato paste or salcha 1 tbsp

STEP-BY-STEP COOKING RECIPE

Step 1
Make shallow longitudinal cuts on the tomatoes, dip in boiling water and peel them. Peel the cucumber, remove seeds and veins from peppers. All vegetables are very finely chopped with a sharp knife, including tomatoes (try not to crush them, namely, chop as much as possible)
Step 2
Mix chopped vegetables with finely chopped parsley, mint, season with olive oil and vinegar, salt. Mix everything thoroughly.
