Apple mini ice cream pies
Each mini cake is a separate dessert that can be served on the festive table.
Ingredients
- 1 package (500 g) ice cream with vanilla and chocolate chips "Straciatella" "Svitlogorye"
- 3 large apples, preferably Granny Smith
- 90 g butter
- 1 tbsp sugar
- 2 st. l. brown demerara sugar
- 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 4 tbsp. l. caramel sauce
- 350 g flour
- 120 g of sugar
- 1/2 tsp salt
- 2 tsp grated lemon zest
- 230 g softened butter
- 2 yolks
- coarse white sugar
STEP-BY-STEP COOKING RECIPE
Step 1
For the dough, combine flour, sugar, salt and lemon zest in a bowl, add butter and stir until the mixture resembles a large crumb. Add the yolks and collect the dough into a ball, quickly knead on the work surface.
Step 2
Divide the dough into 4 parts, roll each into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.
Step 3
Peel the apples and cut into cubes.
Step 4
Melt 70 g butter in a wide skillet, add apples and cook over medium heat, stirring for 5-7 minutes, until soft. Add sugar and cinnamon and cook for another 5 minutes. Remove from heat and add vanilla extract. Cool it down.
Step 5
Roll a ball of dough between two sheets of parchment into a 16 cm circle. Transfer to a baking sheet lined with parchment.
Step 6
Place a quarter of the apple filling in the center of the circle. Fold the edges of the filling dough. Also form 3 more cakes.
Step 7
Brush the edges of the cakes with the remaining butter and sprinkle with coarse sugar. Place in an oven preheated to 175 ° C and bake for 20-25 minutes, until golden brown.
Step 8
Remove the finished pies from the oven and cool slightly. Transfer to plates, place a scoop of ice cream in the center and top with caramel sauce.
