Sicilian-style rice arancini with shrimps
Ingredients
- shrimp 150 g
- round grain rice 150 g
- goat cheese 75 g
- egg 2 pcs.
- vegetable broth 1000 ml
- dry white wine 50 ml
- onion 1/2 pc.
- dried thyme 1 pinch (s)
- dried marjoram 1 pinch (s)
- chopped parsley 1 tbsp
- chopped green onions 1 tbsp
- 1/2 lemon zest
- olive oil 250 ml
- butter 20 g
- ground black pepper - to taste
- breadcrumbs
STEP-BY-STEP COOKING RECIPE
Step 1
Finely chop the onions and save in a saucepan with butter. Add rice and stir. Pour in some of the shrimp broth and cook for 15 minutes (when the amount of liquid decreases, gradually add the shrimp broth). Boil the rice until tender, add half the goat cheese, parsley, thyme, marjoram, season with salt and pepper, stir and cool.
