Arugula salad with capers and parmesan
The basis for this vegetable salad is arugula and salad leaves. Capers and Parmesan add an interesting new flavor to it.
Ingredients
- 200 g arugula
- 100 g lettuce leaves
- 200 g cherry tomatoes
- 10 ml capers
- 100 g olives
- 100 g of parmesan
- a handful of green onions
- a handful of pine nuts
- 60 ml olive oil
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the cherry tomatoes in half. In a large bowl, combine arugula, lettuce, tomatoes, capers, olives, pine nuts, and parmesan.
Step 2
Cut the green onions with scissors and add to the salad. Season with olive oil. Serve garnished with Parmesan cheese on top.
