Arugula, chanterelle and cherry tomato salad with yoghurt dressing and smoked cheese

This salad cannot be called ordinary, since we collected it from arugula, chanterelles, cherry tomatoes and smoked cheese, added spices and dried olives, and seasoned with yogurt. And it turned out to be almost Italian, light, hearty dish.

Arugula, chanterelle and cherry tomato salad with yoghurt dressing and smoked cheese
Ingredients
  • olive oil for frying
  • small chanterelle mushrooms - 400 g
  • garlic - 4 cloves
  • fresh thyme - 12 g
  • arugula - 180 g
  • cherry tomatoes - 240 g
  • natural yogurt - 120 g
  • olive oil for salad - 200 ml
  • sea salt - 20 g
  • freshly ground black pepper - 4 g
  • smoked scamorzio cheese - 120 g
  • dried olives - 20 g

STEP-BY-STEP COOKING RECIPE

Step 1
Fry the chanterelles with garlic and thyme in olive oil until golden brown, season with salt and pepper.
Step 2
In a bowl, stir fried chanterelles, arugula, halved cherry tomatoes and season with yoghurt, olive oil, salt and pepper.
Step 3
Place on a plate and decorate with scamorzio slices and olives, ground in a blender.
