Baked Pepper and Mozzarella Salad
A salad close in taste to caprese thanks to mozzarella, tomatoes and balsamic vinegar. But baked bell peppers, arugula, and grated Parmesan make it a totally new dish. Such a salad with baked peppers and mozzarella will look great on any summer table and will suit any barbecue.
Ingredients
- 3 red bell peppers
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 3 large sweet tomatoes
- 2 large mozzarella balls
- 100 g arugula
- 100 g of grated Parmesan cheese
- salt pepper
- vegetable oil for frying
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the bell peppers and cut into 4 pieces. Place the pepper quarters in a bowl and top with the olive oil and balsamic vinegar. Stir and let sit for 20 minutes.
Step 2
Remove the peppers from the bowl and place them on a well-heated and oiled grill or skillet. Fry until soft and the first tan marks appear for 10-15 minutes. Then return the peppers to the bowl with the oil and balsamic vinegar and stir.
Step 3
Cut the tomatoes and mozzarella into wedges.
Step 4
Combine tomatoes, mozzarella and baked peppers. Add arugula, sprinkle with grated Parmesan. Drizzle olive oil over the salad and serve.
