Baursaki
Baursak or baursaks are traditional pastries among the Turkic peoples. It is prepared from unleavened or, like the Kazakhs, yeast dough and served on holidays, for example, at weddings. The Kazakhs still have a wedding custom, when baursaks, along with coins, are scattered over the heads of the newlyweds.
Ingredients
- 50 ml hot water
- 1 tbsp sugar
- 1 tsp salt
- 20 g dry yeast
- 300 ml of milk
- 20 g butter
- 1 egg
- 500 g flour
- vegetable oil for deep fat
STEP-BY-STEP COOKING RECIPE
Step 1
Dissolve sugar and salt in hot water. Dissolve yeast in warm milk, add melted butter, beaten egg and sugar-salt solution and stir gently.
Step 2
Gradually add flour to the resulting mixture and knead the dough. The mass should be sticky. Knead the dough for 10 minutes. Then place in a large saucepan with a lid and cover with a towel. Leave to rise in a warm place for 1.5 hours.
Step 3
Knead the dough well again and put it back in a warm place under a lid and a towel, now for 40 minutes. 4. Roll out the risen dough into a layer 5–7 mm thick. Cut into squares about 5 cm.
Step 4
Fry the baursaki over moderate heat in a lot of oil on each side, until golden brown.
