Bollywood-style plum ice cream

Plum ice cream is no more difficult to prepare than from any other berries and fruits. You don't need an ice cream maker or freezer for this recipe; a freezer is enough.

Bollywood-style plum ice cream
Ingredients
  • 700 g ripe pitted plums
  • 400 ml condensed milk
  • 120 ml concentrated milk (canned)
  • 100 g of sugar
  • 2 tbsp. l. chopped unsalted pistachios
  • zest of 1 small lemon
  • 7 boxes of cardamom seeds

STEP-BY-STEP COOKING RECIPE

Step 1
In a mortar, grind the cardamom seeds with sugar and lemon zest.
Step 2
Cut the plums in half and transfer to a saucepan. Add 90 ml of water to the cardamom-sugar mixture. Pour the plums and bring to a boil over medium heat.
Step 3
Reduce heat, cover and simmer for 10 minutes. Place the plums in a sieve, transfer to a blender bowl and puree. Cool completely.
Step 4
Combine the condensed and concentrated milk and 300 g of plum puree in a blender bowl until smooth. Pour into 6 small tins and place in the freezer for 4 hours.
Step 5
Dip the molds in hot water and hold for a few seconds. Flip over and place ice cream on a plate. Serve with leftover puree and pistachios.
