Breakfast Egg Bacon Muffins
Ingredients
  • 4 eggs
  • 120 g of bacon
  • 10 green onions feathers (should make 1/2 cup chopped)
  • 150 g cheddar cheese (or other well-melting cheese with a pronounced flavor)
  • 175 g flour
  • 1 tsp baking powder
  • 1/4 tsp soda
  • 120 ml of kefir
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 2 tbsp. l. vegetable oil
  • 1 egg

STEP-BY-STEP COOKING RECIPE

Step 1
Preheat oven to 180 ° C. Oil 4 large muffin tins.
Step 2
Cut the bacon into small cubes. Preheat skillet, add bacon and sauté until golden brown. Transfer to a paper towel. Chop green onions finely. Grate the cheese.
Step 3
Sift flour with baking soda and baking powder into the first bowl, stir.
Step 4
In another bowl, combine kefir, sour cream, salt, egg and vegetable oil.
Step 5
Pour the "wet" mixture into the dry mixture and stir quickly. Add bacon, cheese and green onions.
Step 6
Place in molds for 3 tbsp. l. dough, make a depression in the center. Break the eggs into these indentations. Distribute the remaining dough between the tins, lay out carefully so as not to damage the egg.
Step 7
Place the muffin tins in the oven and bake for 20 minutes, until golden brown. Leave the finished muffins in the tins for 5 minutes, then carefully remove them from the tins. Serve the muffins warm.
