Tiramisu with pistachios

Dessert tiramisu, whose name translates as "lift me up" - is the perfect dessert to cheer up. You can cook it all year round, but in winter tiramisu is more relevant than ever: airy cookies soaked in natural coffee and delicate butter cream give a good mood twice as fast.

Ingredients
  • Savoyardi cookies - 100 g
  • espresso - 160 g
  • cocoa powder, pistachios for decoration
  • yolks - 2 pcs.
  • sugar - 75 g
  • mascarpone cheese - 250 g
  • cream 33-35% - 100 g

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare the mousse: the yolks with sugar, stirring with a whisk, bring in a water bath to a temperature of 85 degrees. Beat the mixture until fluffy, cool and add the mascarpone cheese.
Step 2
Beat the cream with a mixer into a fluffy dense mass. Add cream to the yolk mass and mix with a silicone or wooden spatula until smooth.
Step 3
Soak the Savoyardi cookies with espresso and put them in a mold tightly to each other. We spread the mousse on top and level it. We kill in the refrigerator for an hour and a half.
Step 4
Sprinkle tiramisu with some powder through a fine strainer and decorate with pistachios.
