Bruschetta with chanterelles and hummus

Bruschetta with chanterelles on a crispy baguette is a real treat. Hummus is used here as a secret ingredient - it turned out that a thick, slightly sweet spread of chickpeas with fried chanterelles is very suitable. Vegetable caviar here gives bruschetta tenderness, juiciness and is needed to contrast with the texture of toasted bread. We advise you to cook more caviar at once in order to smear on sandwiches not only with mushrooms, but also with cheese and sausage. It is much healthier than butter.

Ingredients
  • 1 baguette
  • 240 g finished hummus
  • 250 g vegetable caviar
  • 250 g of chanterelles
  • 30 g pine nuts
  • greens for decoration
  • salt pepper
  • 200 g eggplant
  • 150 g onion
  • 150 g carrots
  • 200 g tomatoes
  • 3 g of dried thyme
  • 1 clove of garlic
  • 100 ml vegetable oil
  • 100 ml chicken broth

STEP-BY-STEP COOKING RECIPE

Step 1
For caviar, prepare and finely chop all vegetables. Add aromatic herbs.
Step 2
Preheat a large skillet with vegetable oil, add vegetables and fry until light golden brown. Season with salt, pepper, add chicken broth and simmer, stirring occasionally, until tender.
Step 3
Fry the chanterelles in another frying pan in vegetable oil until tender.
Step 4
Cut the baguette into slices slightly obliquely, sprinkle with vegetable oil from the cut side and grill until golden brown.
Step 5
Spread the baguette with hummus, top with the vegetable caviar and then the chanterelles. Sprinkle with pine nuts and garnish with watercress (or other herbs of your choice).
