Bruschetta with cottage cheese, caviar and quail egg is an exquisite breakfast snack. One such bruschetta will be enough to forget even about lunch: such a breakfast is not only original and tasty, but also hearty.

Ingredients
  • 2 ciabatta buns or 4 slices of toast bread
  • 2 medium tomatoes
  • 3-4 st. l. smoked capelin roe or pike roe
  • 3-4 sprigs of dill
  • 6 tbsp. l. fatty and dry cottage cheese
  • 4 quail eggs
  • at least 150 g salad mix (arugula, corn, romano)
  • olive oil
  • 20 g butter
  • slice of lemon
  • freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
If using ciabbats, cut them in half lengthwise. Drizzle with olive oil and fry on both sides in a grill pan until golden brown.
Step 2
Cut the tomatoes in half, remove the core with the juice, cut the pulp into 1 cm cubes.
Step 3
Sprinkle caviar with lemon juice, add cottage cheese, chopped dill, pepper. Stir until smooth. Add the tomatoes and stir with a spoon.
Step 4
Heat the butter in a pan, fry 4 quail eggs - try to break the eggs into the pan so that they do not come into contact with each other.
Step 5
Put a leaf of lettuce on the bread, then - cottage cheese with caviar and tomatoes, on top with fried eggs from one egg. Serve immediately.
