Burger with chopped kid

Burger is a burger in Sochi. But such a bun with a cutlet will not be offered to you in any fast food: the dough for the bun is mixed with yogurt, the cutlet is made from kid's meat. Cilantro and spicy tomato sauce as an accompaniment - warm greetings from the Caucasus.

Ingredients
  • 400 g flour
  • 6 g dry yeast
  • 25 ml mazoni
  • 1 egg
  • 10 ml vegetable oil
  • 10 g of sugar
  • 4 g of salt
  • 1 kg boneless kid meat
  • 1-2 medium onions
  • 4 cloves of garlic
  • 80 g bread crumbs
  • 2 eggs
  • a few sprigs of cilantro and basil
  • salt, freshly ground black pepper
  • 8 eggs
  • spicy tomato sauce
  • vegetable oil
  • 70 g Korean carrots
  • 70 g red cabbage
  • a handful of mixed salad
  • 1/3 onion
  • 2 tbsp. l. mayonnaise

STEP-BY-STEP COOKING RECIPE

Step 1
For buns, dissolve the salt in 140 ml of warm water, add flour, add all the other ingredients. Knead the dough. Cover the dough with plastic wrap and leave at room temperature for 30 minutes.
Step 2
Divide the dough into pieces (100 g each), roll them into balls, place on a baking sheet covered with parchment and bake in an oven preheated to 200 ° C for 10–12 minutes.
Step 3
Peel the kid's meat from films and blood clots. Chop into small pieces, then chop into minced meat with a heavy knife. Combine with finely chopped onion and garlic. Add egg, chopped herbs, bread crumbs, salt and pepper. Mix the minced meat thoroughly, or better - beat it on the table so that it is saturated with air.
Step 4
Form minced meat into patties of 150 g each and send them to the refrigerator for at least 1 hour.
Step 5
For the salad, finely chop the red cabbage and onion. Salt the cabbage and mash it with your hands. Pick the lettuce leaves with your hands. Mix onions, cabbage, lettuce, Korean carrots, season with mayonnaise.
Step 6
Fry individual fried eggs from 8 eggs in vegetable oil. Fry the cutlets on a greased grill, 5-6 minutes each. from each side.
Step 7
Cut the buns in half, sprinkle with vegetable oil and fry from the side of the grill until beautiful stripes.
Step 8
Assemble the burger: put some salad on the bottom half of the buns, then the kidney cutlet, sprinkle with fried eggs on top, sprinkle with spicy tomato sauce. Cover with the other half of the bun and serve.
