New Year is always accompanied by the aroma of citrus fruits. Most people cannot imagine New Years and Christmas without these fragrant fruits. But where did this tradition come from? According to one version, this tradition came to us from ancient Europe. The father of three daughters could not collect a dowry for them, so he decided to extract income from their beauty, and this would have happened if it were not for Saint Nicholas. Being humble, he discreetly threw a bag of gold into their house through the chimney. According to legend, the gold got into the stockings hung in front of the hearth to dry, where it was found in the morning. The delighted father gave his daughters in marriage, and people developed a tradition of hanging stockings for gifts and putting golden oranges or tangerines in them as a symbol of the gold donated by Saint Nicholas. According to another version, the tradition of celebrating the New Year with tangerines and oranges came from China more than 1000 years ago. There, the guest, congratulating the hosts on the New Year, presented a couple of tangerines, among other gifts. And the hosts, in turn, presented the guest with a pair of golden citrus fruits. Thus, people exchanged wishes for monetary luck and prosperity in the coming year. After all, tangerines in Chinese are very consonant with the word "gold". This is how the Chinese attracted wealth to their homes. And the tangerine is truly "golden", not only in its appearance, but also as a symbol of wealth. But be that as it may, we, too, will not break the tradition. I suppose that such a cake will pleasantly surprise guests and relatives!

  • baking powder (for gingerbread) 1 tsp
  • eggs (for biscuit) 5 pcs.

  • flour (for biscuit) 100 g

  • cream 33% (for cream) 250 ml
  • icing sugar (for cream) 100 g
  • orange and raspberry jams "Maheev" 2 pcs.

STEP-BY-STEP COOKING RECIPE

Step 1
Melt butter, honey and sugar in a water bath. Remove from the bath, add baking powder, mix and let cool for about 15 minutes.

While the mass is cooling, sift the flour into a bowl and add cocoa and spices.
Step 3
Drive an egg into a slightly cooled mass, mix. Pour in brandy, mix again. Pour the still warm mixture into a bowl of flour and knead the dough. Wrap in plastic and refrigerate for several hours.
Step 4
In the meantime, let's get to the biscuit. To do this, separate the yolks and whites. Beat whites with sugar until firm. Add the yolks one at a time. Then add flour with cocoa and mix gently with a spatula. Cover the bottom of the mold with baking paper, pour out the dough and bake in an oven preheated to 170–180 ° for 30 minutes. Turn the finished biscuit, remove the mold and cool completely. Then cut into cakes and soak in syrup.
Step 5
Soak gelatin in a little water. Beat the cream with powdered sugar until firm peaks. Heat the swollen gelatin, cool and pour into whipped cream. Stir and transfer to a pastry bag.
Step 6
Apply the cream on the first cake, on top of the cream, apply raspberry jam.
Step 7
Cover with the second cake layer. Repeat everything and cover with the third cake. Put in the refrigerator to solidify.
Step 8
From the resulting mass, mold balls - oranges (or tangerines). make a small hole and fill them with orange jam. Put in the refrigerator.
Step 9
Knead the dough using rice flour, icing sugar, water, lemon juice and dye. It will be liquid. Put in the microwave for 1.5-2 minutes. After a minute, take out, mix and put again ... After 30 seconds, take out again and mix. If there is no liquid, the dough is ready. If there is still liquid, then place the dough for another 30 seconds.
Step 10
Put the dough on the table sprinkled with cornstarch. And adding starch, knead the elastic dough. Since the dough is hot, it is best to knead with gloves. Wrap the finished dough in foil and let cool.
Step 11
Roll out the remaining gingerbread dough and cut out parts of the "box" according to the size of the cake. Bake in an oven preheated to 170 ° for 7-8 minutes and let cool well.
Step 12
Beat softened butter with condensed milk. Coat the sides of the cake with this cream and attach the "boards". I didn't grease the top of the cake, I just put the oranges.
