Chocolate roll with butter cream and cranberry jam

Delicate biscuit roll with butter cream and cranberry jam TM "Maheev". There are a lot of whole cranberries in this jam, which set off the sweetness of the cream with a pleasant sourness.

Ingredients
  • wheat flour 120 g (biscuit)
  • chicken egg 5 pcs. (biscuit)
  • cocoa powder 25 g (biscuit)
  • sugar 150 g (biscuit)
  • vanilla essence to taste (biscuit)
  • butter 150 g (cream)
  • condensed milk (170 g in cream + 100 g in glaze) 270 g
  • curd cheese 280 g (cream)
  • cranberry jam "Maheev" TM 150 g
  • sour cream 100 g (glaze)
  • lemon juice 3 tbsp (glaze)

STEP-BY-STEP COOKING RECIPE

Step 1
Mix flour and cocoa powder, sift. Beat the eggs with a mixer until fluffy, gradually adding sugar with vanilla essence. Beat for 5 minutes. In two or three steps, add flour with cocoa to the beaten egg mass, mix.
Step 2
Cover a 38/33 cm baking sheet with baking paper, if in doubt about the quality of your paper, grease with oil. Put out the dough, level and place in an oven preheated to 180 degrees. Bake for 10-12 minutes, do not dry the biscuit.
Step 3
Remove the finished crust from the baking sheet along with the paper, cover it with a towel on top and roll it up with the paper and towel. Leave to cool for 2 hours.
Step 4
While the biscuit is cooling down, prepare a cream: beat with a mixer until a fluffy mass of room temperature butter with 170 g of condensed milk. Milk and butter should be at the same temperature. Add the amount of condensed milk to your taste ... add sweetness to your taste. Then add curd cheese, mix.
Step 5
Unscrew the chilled biscuit, remove the towel. Coat the biscuit with cranberry jam of TM "Maheev" so that the cranberries are evenly distributed over the biscuit cake. Then gently apply butter cream on top. I do this using a cooking bag with a round hole attachment so the cream can be applied evenly over the entire surface. Roll up the roll and put in the cold for 2-3 hours.
Step 6
Cover the cooled roll with sour cream glaze. For glaze, mix sour cream with 100 g of condensed milk. Then add lemon juice, stir again, the glaze should become thick after adding lemon juice. I stir the frosting by hand ... with a whisk. The roll is decorated with chocolate chips.
