Ingredients
  • 250 g almonds
  • 130-140 g of sugar
  • 6 proteins
  • 60-70 g flour
  • 15 g butter

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the almonds. Dry on a baking sheet. Crush in a mortar and grind with half the sugar. Add a quarter of the proteins, mix and pass the resulting mass through a meat grinder using a fine wire rack.
Step 2
Whisk the remaining egg whites with the remaining sugar until soft peaks. Transfer to a bowl and stir in the almond mixture in a water bath. Warm it up to 40 ° C. Remove from heat and cool, stirring occasionally, to 18-20 ° C. Add sifted flour and beat with a mixer at low speed, 8-10 minutes.
Step 3
Transfer the finished dough into a pastry bag and place it on a baking sheet lined with baking paper, in the form of small cakes (8-9 cm in diameter) at a distance of 3-4 cm from each other. Bake at 180 ° C for 10-12 minutes. The cookies should be browned and baked. Remove the baking sheet, remove the cookies and let cool completely.
