Profiteroles with lemon custard with white chocolate
Making a custard takes time and attention, but the results are worth it. Profiteroles with delicate and aromatic (thanks to citrus) butter cream are the perfect end to a festive lunch or dinner.
Ingredients
- 3 lemons
- 200 g light cane sugar
- 100 g butter
- 6 yolks
- 1 basic serving of ready-made profiteroles
- 100 g white chocolate
- zest of 1 orange
STEP-BY-STEP COOKING RECIPE
Step 1
Remove the zest from the lemons with a fine grater. Combine it with cane sugar and rub with your fingertips to give the zest a flavor.
Step 2
Squeeze the juice from the lemons - you will need 120 ml - and mix with the sugar and zest. Place in a water bath to completely melt the sugar.
Step 3
Stir in the butter and whisk until smooth.
Step 4
While the mixture is not too hot, add the yolks while continuing to knead the cream thoroughly with a whisk.
Step 5
Cook the cream in a water bath until it thickens, stirring all the time with a wooden spatula to prevent the cream from sticking to the bottom. The cream is ready when you run your finger over the back of the spoon - and the edges of the strip do not flow back.
Step 6
Let the cream cool and fill with profiteroles.
