Berries under orange sabayon
Sabayon is a great reminder that the simplest things can be the tastiest. The classic egg sauce is usually made with champagne in France or Marsala in Italy. We offer a variant with orange juice, so that children can also enjoy the dessert.
Ingredients
- 500 g berries (strawberries, raspberries, blackberries)
- 1 orange
- 2 eggs
- 2 yolks
- 125 ml cream 35% fat
- 1/3 cup sugar
- 1/4 cup + 1 tbsp. l. powdered sugar
STEP-BY-STEP COOKING RECIPE
Step 1
1. Rub the zest from the orange with a fine grater, then squeeze out the juice.
Step 2
2. Whisk in 1/4 cup caster sugar until stiff peaks.
Step 3
3. In a fireproof bowl, combine eggs, yolks, zest, and juice. Slowly add 1/3 cup sugar, whisking continuously, until the mixture begins to foam.
Step 4
4. Place the mixture in a water bath and continue whisking until the mixture doubles in volume and thickens.
Step 5
5. Remove the sauce bowl from the water bath and continue whisking until the sabayon is brought to room temperature, about 4-5 minutes. Stir in the whipped cream into the sauce.
Step 6
6. Place the berries in a ceramic baking dish (cut large strawberries into 2–4 pieces). Pour the sauce over the berries. Sprinkle with the remaining powdered sugar and place under the preheated grill for 1–2 minutes. or caramelize with a gas burner. Serve immediately.
