Jellied liver roll in cranberry mousse
Here's a recipe for a liver jellied roll in cranberry mousse. This is delicious!!!
Ingredients
- cranberries (frozen) - 125 g
- onion - 1 pc.
- vegetable oil - 1 tbsp.
- semi-sweet red wine - 70 ml
- honey - 20 g
- gelatin - 12 g
- cold water, boiled - 110 ml
- chicken liver - 200 g
- butter - 40 g
- hard cheese - 50 g
- chicken egg (boiled) - 1 pc.
- carrots - 1 pc.
- onion - 1 pc.
- stalked celery - 1 pc.
- seasoning - 0.5 tsp.
- ground black pepper - 1 pinch (s)
- salt - 2 pinch (s)
- chicken egg (boiled, for the middle of the roll) - 4 pcs.
STEP-BY-STEP COOKING RECIPE
Step 1
Let's make the cranberry mousse. Fill the gelatin with cold, boiled water, give time to swell.
Step 2
Cut the onions into half rings and fry in olive oil until transparent.
Step 3
Add to the fried onions: frozen cranberries, wine, honey, salt, cook for 20 minutes over low heat. We taste and adjust the taste, if the sauce is very sour, add honey or sugar. Remove from heat, allow time to cool and grind with a blender.
Step 4
Heat the swollen gelatin without boiling and mix with cranberry mousse.
Step 5
Cover a baking sheet (33x23) with cling film. We lay out vegetable decorations for the roll.
Step 6
To decorate the roll, I have fried carrots, fresh celery and parsley leaves. I am showing 2 simple options.
Step 7
Fill the vegetable decoration with cranberry mousse, carefully align and send to harden, for 20-30 minutes.
Step 8
Let's prepare the pate. Fry finely chopped onions until transparent, add chopped carrots and chopped celery, fry in a mixture of vegetable and butter until cooked.
Step 9
Chicken liver, previously soaked in milk, roll in wheat flour, fry until cooked on both sides for 2-3 minutes. Then put in a blender bowl and grind.
Step 10
On the frozen cranberry mousse, lay out the liver pate, put the peeled chicken eggs and gently roll into a roll.
