Pistachio-bitter chocolate sweets

Ingredients
- 300 g chocolate 54% cocoa

- 200 g chocolate 80% cocoa
- 180 g cream, 35% fat
- 40 g glucose
- 220 g white chocolate
- 50 g cream, 35% fat
- 25 g glucose
- 25 g pistachio paste
- 20 ml of "Advocate" liqueur
STEP-BY-STEP COOKING RECIPE
Step 1
For the pistachio ganache, melt the chocolate. Mix the cream with glucose and bring to a boil. Pour the cream into the melted chocolate, stir. Add pistachio paste and liqueur. Whisk with a hand blender.
Step 2
Pour the chocolate mass into a special frame. Leave to crystallize for 2–3 hours.
Step 3
For the dark chocolate ganache, melt the chocolate. Add glucose cream, brought to a boil. Stir. Punch with a hand blender. Place the resulting ganache on the framed chocolate mass. Leave to crystallize at 12-14 ° C, 12 hours. Cut into 1/2-inch cubes.
Step 4
Temper the chocolate to cover. Put the prepared candy on a fork and glaze the candy. Decorate the candies with pistachios. Leave until the chocolate hardens completely.
