Pumpkin cheesecake with cottage cheese
Sweet pumpkin pastries ... delicious and delicate cheesecake. Who would refuse such a delicacy? Try making an unusual cheesecake in pumpkin season, delight your family and friends.
Ingredients
- shortbread cookies 150 g
- cane sugar 40 g
- butter 60 g
- pumpkin puree 300 g
- egg 2 pcs.
- low-fat cottage cheese 300 g
- corn starch 40 g
STEP-BY-STEP COOKING RECIPE
Step 1
Grind the cookies into crumbs. Add melted butter, sugar and stir. Lay out and tamp tightly in a split baking dish (mine is 18 cm in diameter).
Step 2
For the base, add sugar, starch to the curd. Whisk in a blender. Add eggs one at a time and beat the filling gently. Add the finished pumpkin puree (for this, bake the peeled pumpkin in the oven and grind in a blender (you can store it in the refrigerator for up to several days). Mix everything.
Step 3
Place the pumpkin-curd filling on the cookie sheet. Bake in an oven preheated to 170 degrees for 50 minutes. Allow to cool at room temperature.
