A wonderful and airy marshmallow with an incredible fresh mint aftertaste, it is very tasty!

Ingredients
  • medium apples (preferably Antonovka) 4 pcs.
  • sugar 450 g
  • egg white 1 pc.
  • water 160 g
  • if-if 4 ch.l.
  • fresh mint 1 bunch
  • dye green (optional) 1 pinch

STEP-BY-STEP COOKING RECIPE

Step 1
Soak agar-agar in 160 g of cold mint infusion in a saucepan with a thick bottom (for half an hour). Then put the agar-agar on the stove and, stirring constantly, bring to a boil, add sugar 250 g and cook the syrup until a thread stretches when raising the spoon (about 5-7 minutes). Set aside, let it cool slightly.
Step 2
Add half of the protein to the applesauce and beat at maximum speed with a mixer until white (take a larger bowl, since the mass will increase in volume), then add the rest of the protein, while continuing to beat. Also, without stopping whisking, add more hot syrup in a thin stream. In the process of whipping, add a few drops of gel green dye (you don't need to add), but it seemed to me that it was more beautiful.
