Honeycomb with pannacotta and strawberries
This dish will cause a real gastronomic ecstasy and sweet "coma" for absolutely everyone. A very unusual honeycomb-like dessert with a rich honey flavor and crunchy texture, it is ideally combined with delicate panacotta.
Ingredients
- 325 g of sugar
- 50 g of liquid meadow honey
- 125 ml glucose
- 15 g soda
- fresh strawberries and mint for serving
- 10–12 g of gelatin
- 100 g white chocolate
- 500 ml cream, 33% fat
STEP-BY-STEP COOKING RECIPE
Step 1
For honeycomb, combine sugar, honey, 60 ml drinking water and glucose in a large saucepan. Heat the mixture to 155 ° C. Sift the baking soda into it gently and let the mixture double in size. Remove from heat.
Step 2
Pour the prepared mixture in a thin layer into a high-rimmed baking sheet lined with baking paper. Leave until solidified.
Step 3
For panacotta, soak gelatin until completely dissolved.
Step 4
Break the chocolate into equal pieces and melt in a water bath.
Step 5
In a clean saucepan, bring the cream to a near boil and remove immediately from heat. Add the squeezed gelatin and, stirring, dissolve completely. Put in white chocolate, stir. Transfer the mixture to a bowl. Place it on ice and cool completely, stirring gently from time to time.
Step 6
Remove the honeycomb and pannacotta from the fridge and place on plates, removing the rings. Break the honeycomb into pieces and decorate the plates with them. Add coarsely chopped strawberries and a few mint leaves. Sprinkle the dessert with honey or draw randomly long stripes and serve.
