Gorgeous Honey Stout Pie
A stout is a type of ale (beer) made with heavily roasted barley malt, giving it a bright caramel flavor.
Ingredients
- 80 ml of stout
- 1 sour juicy apple (about 150 g)
- 90 g sugar syrup
- 50 g oatmeal
- 90 g of liquid flower honey
- 90 g wheat bread crumbs
- 2 eggs
- zest and juice of half a lemon
- zest of half an orange
- thick yogurt or sour cream for serving
- 250 g flour plus a little more to roll out
- 125 g butter + a little more to grease the mold
- 50 g icing sugar
- 3 eggs
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
For the base, beat flour, salt, diced butter and sugar in a blender until medium crumbs are formed. Transfer the mixture to a bowl.
Step 2
Add 2 beaten eggs, knead the dough. Do not overdo it in kneading - just collect it into a single ball.
Step 3
Wrap the dough in plastic wrap and refrigerate for 20 minutes.
Step 4
Grease an ovenproof dish 24–26 cm in diameter with oil.
Step 5
Dust the table with flour. Lay out the dough and roll it out with a rolling pin into a circle 5 cm larger than the diameter of the mold. Use a rolling pin to transfer the dough into the mold. Press down on the sides. Cut off the excess with a sharp knife. Place baking paper over the dough. Spread in an even layer of baking beans or dry beans 2 cm thick. Bake in oven at 150 ° C for 45 minutes.
Step 6
Remove the mold from the oven. Increase heat to 180 ° C. Remove beans and paper. Lubricate the sand base with a beaten egg - this will definitely prevent cracking - and leave until use.
Step 7
For the filling, peel the apple and grate it on a coarse grater. Combine in a saucepan with beer and bring to a boil.
Step 8
Reduce heat and evaporate liquid by half. Remove from heat. Cool slightly. Add syrup, oats, honey, crumbs, eggs, and whole zest. Stir.
Step 9
Pour the filling into the dough base. Return to oven and bake for 20-25 minutes. Cool slightly and serve with yogurt or sour cream.
