Profiteroles with condensed milk, banana and orange sauce
So that the cream in profiteroles does not seem very cloying and acquires a fresh and bright citrus aroma, prepare orange sauce for them.
Ingredients
- 100 g butter
- 250 ml condensed milk
- 1 packet (8 g) vanilla sugar
- 1 large banana
- 1 basic serving of ready-made profiteroles
- 1 orange
- 50 g of brown sugar
- 1 tbsp. l. corn starch
- 25 ml orange liqueur
STEP-BY-STEP COOKING RECIPE
Step 1
Bring the butter to room temperature. Cut into small cubes and place in a deep bowl. Beat with a mixer into a fluffy pale mass (when beating, the volume should increase by about 2 times).
Step 2
Continuing to beat, pour half the condensed milk and vanilla sugar into the cream in a thin stream. Beat the mixture with a mixer until smooth. Then add the remaining condensed milk and beat until the cream becomes fluffy.
Step 3
Slice the banana and stir in the cream (you can add the pulp to the cream at the end of the beat).
Step 4
Start with the resulting mixture of profiteroles.
Step 5
For the sauce, remove the zest from the orange and cut into strips. Squeeze the juice out of the orange, add sugar, 150 ml of drinking water and strips of zest. Bring to a boil and cook for 5 minutes. Strain, stir in the diluted in 2 tbsp. l. cold water starch, bring to a boil. Remove from heat immediately and stir in liquor. Pour the sauce over the profiteroles.
