Pastry Potatoes with custard

Potato cake is one of the most popular desserts that can be easily prepared at home. For this "Potato" chef Maxim Rybakov prepared the ground, literally - "earth" of chocolate cookies and gingerbread, halva, fried hazelnuts. When serving the cake, he suggests putting the Potatoes in a wooden box and sprinkling them with chocolate earth.

  • milk - 500 ml

  • butter - 30 g
  • roasted hazelnuts - 30 g
  • butter 82.5% - 400 g
  • condensed milk - 300 g
  • cognac - 20 g
  • icing sugar - 50 g
  • shortbread cookies (anniversary) - 400 g

  • chocolate "earth" - 100 g
  • potatoes - 90 g (3 pieces 30 g each)
  • custard cream - 30 g
  • shortbread cookies (chocolate) - 25 g

  • dry mint - 2 g
  • shortbread cookies (chocolate) - 100 g
  • gingerbread chocolate - 250 g
  • halva - 400 g
  • butter - 200 g
  • icing sugar - 50 g

STEP-BY-STEP COOKING RECIPE

Step 1
Cooking cakes. Whisk the softened butter with the addition of condensed milk, brandy and powdered sugar, chill. Punch the shortbread cookies into crumbs in a blender, mix with whipped butter, cool. Shape potatoes, each weighing 30 g, roll in a mixture of punched chocolate chip cookies and cocoa. We cool it down.
Step 2
Preparing the "ground" for Potatoes. Punch shortbread cookies into crumbs, finely knead the gingerbread and halva, combine everything with powdered sugar. Warm up the oil until a caramel aroma appears, cool. Mix with chocolate earth, add cocoa, stir thoroughly.
Step 3
Preparing the custard. Separate the yolks, mix with sugar, grind, add flour, warm milk, vanilla sugar, put in a water bath. Cook, stirring constantly, until thickened. Fry the hazelnuts, punch into small crumbs, add to the cream. Store in a fridge in a cornet.
Step 4
To serve for 1 serving: put the custard from the cornet in a wooden box, put the potatoes on top, next to it - cranberry "stones", sprinkle with the chocolate "earth" warmed up in the microwave, ground chocolate chip cookies, cocoa and dry mint powder. Next we lay out a shovel with a rake.
