Pie with cottage cheese, nuts and candied fruits
- 500 g puff yeast dough
- 40 g butter
- 20-30 g of brown sugar
- 700 g country cottage cheese
- 100 ml of cream with a fat content of 30%
- 4 eggs
- 80 g of sugar
- 1 tbsp. l. semolina
- half vanilla pod seeds
- 1 tsp ground cinnamon
- 40 g of peeled almonds and candied fruits
STEP-BY-STEP COOKING RECIPE
For the filling, put cottage cheese in cheesecloth and in a colander, press down with oppression, leave for 1-2 hours. Then wipe through a sieve, mix with finely chopped candied fruits, nuts and semolina.
Separate the yolks from the whites and mash with vanilla sugar. Add cream and curd.
Beat the whites until fluffy. Without stopping whisking, add sugar in a thin stream. Beat at medium speed until a firm foam forms. Add the proteins in portions to the curd mass, gently stirring with a spatula from bottom to top.
Preheat oven to 180 ° C. Roll out the dough a little, and then stretch it with your hands into a large round layer. Place in a 26 cm ovenproof dish lined with baking paper. The dough should hang over the edges of the mold. Place the filling on the dough. Cover it with the edges of the dough, after cutting them evenly and making notches every 2 cm. Bake for 45-50 minutes.
Melt the butter in a saucepan. Add sugar and dissolve completely. In 10 minutes. until tender, pour the sweet butter syrup over the cake. Serve warm, sprinkled with powder.
