Chocolate profiteroles (whole grains)

The name of the famous French product, "profitrole", literally means "small thing, but nice." Indeed, compact custard cakes cannot but rejoice, especially in natural format. So, one day I took a chance and, having collected enough secrets of the classic choux pastry, created truly healthy profiteroles - based on whole grain flour and organic dairy products, with rich chocolate cream. Such cakes will certainly surprise those with a sweet tooth :) However, if you wish, these products can be "filled" with any usual cream: custard, butter, cottage cheese, butter, etc. In my case, I suggest a combined, moderately sweet and dense cream.

Ingredients
  • chicken egg 3 pcs.
  • raw sugar 35 g
  • vanilla sugar 5 g
  • corn starch 8 g
  • milk 175 ml
  • butter 100 g
  • water 50 ml
  • whole grain wheat flour 70 g
  • salt pinch (s)
  • dark chocolate 65 g

STEP-BY-STEP COOKING RECIPE

Step 1
Fill the completely cooled profiteroles with chilled cream: you can use a pastry syringe, or you can just carefully cut each one and fill it with cream using the same teaspoon.
