Closed apple pie
The name of the famous American housewife is known to almost every cook. Martha Stewart's recipes are a fertile field for improvisation, and the closed apple pie is living proof of this. The pie is quite simple to prepare, it has a delicate layered dough structure and abundant fruit filling. To preserve the delicious taste of the dessert, but adapt it to a healthy diet, I suggest using whole grain flour, raw sugar, quality butter, seasonal apples and fresh spices. And for the best result, do not forget about a pinch of inspiration;)
Ingredients
- whole wheat flour 225 g
- sea salt 3 g
- butter (chilled) 125 g
- chicken egg 1 pc.
- apples (hard variety) 700 g
- freshly squeezed lemon juice 25 ml
- raw sugar 80 g
- ground cinnamon 3 g
- corn starch 25 g
STEP-BY-STEP COOKING RECIPE
Step 1
For a classic shortcrust pastry, add a pinch of salt and diced cold butter to the sifted flour. Grind the mixture into crumbs, beat in an egg and (if necessary) add a couple of tablespoons of ice water. Knead a soft dough quickly. Divide it into two parts: a large and a smaller one, wrap each with plastic foil and refrigerate for at least 30 minutes.
Step 2
For the filling, peel washed apples from the core, cut them into slices or medium-thick cubes and stir with cinnamon, lemon juice, sugar, starch.
Step 3
Place the cake in the oven for 30 minutes. Then reduce the temperature to 160 and bake for another 20-25 minutes. The finished cake will be covered with a beautiful golden brown crust.
