Coconut-banana cookies with sesame seeds, flour and sugar free
If you want something sweet, but not burdensome for your figure, then this is definitely it - coconut-banana cookies with sesame seeds, without flour and sugar. In the summer, such a dessert will go with a bang in any company.
Ingredients
- 1 large coconut
- 3 large bananas
- juice and zest of half a lemon
- 8 Art. l. unroasted sesame seeds
- 0.5 tsp. ground cinnamon and cardamom
STEP-BY-STEP COOKING RECIPE
Step 1
Preheat oven to 180 ° C. Place the coconut in a tight bag, cover with a folded towel in two or three layers, and hit it hard with a hammer (you can use a meat hammer) or a heavy rolling pin. Peel the nut and peel the brown skin with a vegetable peeler.
Step 2
Grate the pulp of the nut on a coarse grater. Line a baking sheet with baking paper, sprinkle the grated coconut evenly and place in the oven for 10-12 minutes. In the middle of this time, stir and add the sesame seeds. Cool it down. Grind half of the mixture in a coffee grinder or blender into "flour".
Step 3
Peel bananas, mash in mashed potatoes along with lemon juice and spices. Add coconut flakes with sesame seeds and flour from them, mix until smooth.
Step 4
Spoon the dough onto the same paper-lined baking sheet to form round, thin cookies 6–8 cm in diameter. Bake in the center of the oven until golden brown, about 15 minutes. Cool before serving.
