Ingredients
  • 450 g ripe pitted plums
  • 2 squirrels
  • 550 g of sugar
  • 100 g icing sugar
  • 100 g cornstarch
  • 24 g sheet gelatin

STEP-BY-STEP COOKING RECIPE

Step 1
Slice the plums. Toss with 50 g of sugar in a saucepan. Cover and cook over low heat, stirring occasionally, until plums are soft, 20 minutes. If the plums are too juicy, drain off the excess juice. Mash the plums with a blender.
Step 2
Cover a 20 cm square dish with baking paper. Sprinkle the bottom with a thin layer of powdered sugar and starch mixture. Pour gelatin with cold water and leave for 10 minutes.
Step 3
In a saucepan, mix the remaining sugar with 200 ml of water. Heat over low heat until sugar is completely dissolved. Raise the heat to medium and simmer the syrup to 125 ° C.
Step 4
Whisk the whites into a firm lather at the same time. When the syrup is ready, mix it with the squeezed gelatin and plum puree.
Step 5
With constant whisking, gradually add the mixture to the whites. Beat the mixture until thick and smooth. Pour it into a mold and leave at room temperature for 2-3 hours.
Step 6
When the marshmallow has hardened, spread a sheet of baking paper on the table, sprinkle it with the remains of powdered sugar and starch. Turn over and transfer the marshmallow layer. Using a large, sharp knife, cut the marshmallows into small strips or squares.
