Cold pork with horseradish and radish dressing
The good thing about this hearty snack is that the meat can be cooked in advance. And only the dressing is prepared in a few minutes before serving. In addition, horseradish and radish sauce will delight not only meat eaters, but also those who have only vegetables on the menu. At the same time, vegetables cut into cubes are dipped in the sauce. The dressing itself has a primordially Russian taste, only it creates a single harmonious taste of all the components of the dish, even if they are minimal. Having washed down such an appetizer with kvass, you fall in love with it forever.
Ingredients
- pork 1 kg
- salt 1 tsp
- peppercorns 1 tbsp
- rosemary sprig 1 pc.
- radish 3-4 pcs.
- horseradish "Maheev" Table 2 tbsp.
- sour cream 20% 1 tbsp
- salt 1/3 tsp
STEP-BY-STEP COOKING RECIPE
Step 1
Cook pork. Dry the surface of the meat with a paper towel. Crush the pepper with the flat side of a knife until large grains, and then mix it with salt. Grate the meat with this mixture.
Step 2
Place the pork in a roasting bag. Place a sprig of rosemary on top of the meat. Fasten the ends of the bag, make 5-6 small holes in it with a sharp object and send it to the oven to bake on a baking sheet at 180 degrees for 35 minutes.
Step 3
At the end of the baking time, turn off the oven, and leave the bag with meat inside for another 1 hour. Then remove from the oven and cool the pork completely without removing it from the bag.
Step 4
Prepare the dressing. To do this, grate the radish on a fine grater. Add horseradish, sour cream and salt. Mix well. Place in a gravy boat for serving.
Step 5
Get the pork out of the bag. Cut into plates. Place on a prepared dish, and place a dressing next to it, fresh vegetables: cucumbers, tomatoes, petioled celery, and bread.
