Couscous salad with green peas

Couscous salads are surprisingly tasty. This cereal absorbs the taste of the dressing very well, so the dish always turns out to be juicy and aromatic. Serve as a salad or main course.

Couscous salad with green peas
Ingredients
  • 1/2 cup couscous
  • 500 g frozen green peas
  • 1 medium bunch of parsley
  • 120 g feta cheese
  • 2/3 cup walnuts
  • For refueling:
  • 1 medium bunch of basil
  • 1/2 cup olive oil
  • 1 shallot
  • 2 cloves of garlic
  • 1 st. l. Teddy bear
  • 3 tbsp. l. white wine vinegar
  • a pinch of dried chili flakes
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Put couscous in a bowl, add a little salt and pour half a glass of boiling water, stir. Cover the bowl with a plate or lid and let sit for 10 minutes. Loosen the finished couscous with a fork.
Step 2
Boil green peas in boiling salted water, 5 minutes. Throw in a colander and pour over with cold water.
Step 3
Chop the parsley leaves coarsely. Chop the walnuts.
Step 4
Peel the shallots and garlic for dressing. Separate the basil leaves from the twigs. Place all dressing ingredients in a blender bowl and blend until smooth. Season with salt and pepper.
Step 5
Combine couscous, peas, parsley, and nuts in a bowl. Drizzle with half the dressing and stir. Refrigerate for 2 hours.
Step 6
Sprinkle the crumbled feta over the salad before serving and pour over the remaining dressing.
