It is better to buy croissants for this pudding at the bakery in the evening before closing - usually there is a serious discount on them, because they can no longer be sold the next day.

Croissant pudding with spices and raisins
Ingredients
  • 10 slightly stale croissants
  • 6-8 boxes of cardamom
  • 2 cinnamon sticks
  • 800 ml milk + more if needed
  • 100 g light raisins
  • 4 large eggs
  • 0.5 tsp salt
  • 50 g of sugar
  • butter for lubrication

STEP-BY-STEP COOKING RECIPE

Step 1
Cut croissants in half lengthways and leave to dry.
Step 2
Crush the cardamom pods, remove the seeds and crush them in a mortar or knife. Break the cinnamon sticks in half. Place the cinnamon and cardamom in a saucepan and cover with cold milk.
Step 3
Rinse and dry the raisins if necessary. Put the raisins in a saucepan with spices and milk, put on low heat, bring to a boil and cook for about 5 minutes. Remove from heat and cool completely. Remove the cinnamon.
Step 4
Beat eggs with salt and sugar until smooth. Continuing to beat, gradually add the milk and raisins.
Step 5
Pour the milk / egg mixture with raisins over the croissants (while pouring, move the croissants apart so that the raisins fall between them) and leave at room temperature for 30 minutes.
