These envelopes will appeal to those who like more fruit filling and less dough itself. The key to success is ripe apricots and the right crumbly dough.

Ingredients
  • 500 g of apricots
  • 50 g caster sugar
  • zest of 1 lemon
  • 300 g flour
  • 50 g almond flour
  • 50 g icing sugar
  • 200 g cold butter
  • 1 pinch lavender (optional)
  • zest of 1 lemon
  • cold water

STEP-BY-STEP COOKING RECIPE

Step 1
Sift the flour into a bowl and add the diced cold butter. Turn on the mixer and at low speed start mixing the butter and flour until small crumbs appear. Clean the sides of the bowl and the mixer blades.
Step 2
Stir in powdered sugar, almond flour, lemon zest, and lavender, rubbed between your fingers, if using. Mix quickly, literally 10 seconds. Pour in 2 tbsp. l. cold milk and stir quickly, the dough should begin to gather into a ball.
Step 3
Place dough on a work surface and knead quickly. Form a ball, wrap in plastic and refrigerate for 1 hour.
Step 4
Preheat oven to 180 ° C. Cut the apricots in half and remove the pit. Cut into quarters and place in a bowl. Add sugar, grated lemon zest, stir.
Step 5
Roll out the dough into a large 7mm rectangle. Cut 6 squares with a side of 12 cm. Place the filling in the center of the squares.
Step 6
Fold the three corners towards the center. Cut out flowers or hearts from the remains of the dough and decorate the junction.
Step 7
Transfer the envelopes to a baking sheet lined with parchment and place in the preheated oven. Bake for 15-18 minutes, until golden brown, do not burn the dough. Cool on a wire rack. Sprinkle with powdered sugar.
