Large salad with duck, bacon, apples and oranges

Duck legs can be bought ready-made, confit - usually they are sold in glass jars. Or, instead of legs, you can take the breast and just fry it - but this, of course, will be a completely different salad.

Large salad with duck, bacon, apples and oranges
Ingredients
  • 2-3 duck legs
  • 8 slices raw smoked bacon
  • 4 green apples
  • 2 oranges
  • 1 Crimean red onion
  • 300 g baby spinach
  • dry white wine
  • 4 h l. Teddy bear
  • 4 tsp red wine vinegar
  • olive oil
  • salt, black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Rub the legs with salt and pepper, wrap in foil, pour in white wine, and bake at 180 ° C, 40 minutes.
Step 2
For dressing, remove the zest from the oranges, mix with vinegar, honey, 2 tbsp. l. oil, salt and pepper.
Step 3
Peel off the peel from the oranges to reveal the pulp. Cut the fillets. Add the leaked juice to the dressing.
Step 4
Peel the apples and cut into medium wedges. Fry the bacon until crispy, place on paper towels. Fry the apples in fat on both sides, 5 minutes, lightly salt and pepper.
Step 5
Thinly chop the onion into feathers, mix with apples and orange fillets, put in the dressing. Remove duck meat from bones and disassemble into fibers (skin can be fried in dry skillet). Arrange the spinach in bowls, top with the duck, apples, oranges and onions, top with the dressing. Sprinkle with crumbled bacon and serve.
