Linseneintopf Lentil Soup with Sausages
Ingredients
- 450 g green lentils
- 100 g onions
- 100 g carrots
- 2 l chicken broth
- 250 g potatoes
- 150 g savory smoked beef sausages (so-called Frankfurt) and 6 more sausages to serve
- 3 tbsp. l. tomato paste
- 20 g hot mustard
- a few sprigs of parsley
- salt pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Cut onions and carrots into small cubes and fry in a saucepan in olive oil until golden brown.
Step 2
Add the small cubed sausages, tomato paste and sauté sausages until golden brown.
Step 3
Add lentils and diced potatoes to a saucepan. Pour in broth. Bring to a boil and simmer over low heat for 30-40 minutes, until lentils are completely cooked. Salt, pepper, remove from heat. Let the soup steep for at least a couple of hours (or better overnight).
Step 4
When serving, place sausage in each bowl of soup, add 1 tsp. mustard and sprinkle with chopped parsley.
