Meatballs with bulgur
Köfte (or kyufta) is a kind of meatballs. A common oriental dish with many regional flavors. Prepared from lamb, beef or veal meat. With or without the addition of cereals, and in some places purely from cereals. There are about 300 varieties of this dish in Turkey alone. I propose a variant with bulgur, a wheat cereal popular in the national cuisines of the Middle East and Mediterranean.
Ingredients
- bulgur 150 g
- tomato juice 1/2 glass (s)
- onion 1 pc.
- garlic 4 pcs.
- minced veal 400 g
- tmin 1 h.l.
- tomato juice 1 glass (s)
- sour cream 2 tbsp
STEP-BY-STEP COOKING RECIPE
Step 1
Bring the tomato juice (1/2 cup) to a boil and pour bulgur over it, cover with a lid. Leave at room temperature for half an hour.
Step 2
Minced meat with onion and 4 cloves of garlic mince 2 times. Add cooled and swollen bulgur, salt and pepper, add cumin, previously ground in a mortar. To stir thoroughly.
Step 3
Form the product into the shape you are accustomed to. There are many ways of heat treatment - boil in broth, fry in a pan or grill. I baked most of it in the oven, pouring a mixture of 1 cup of tomato juice with sour cream and covering it with foil in the oven at a temperature of 200-220 degrees for 25 minutes.
Step 4
I just fried some of the meatballs in vegetable oil on moderate heat on both sides.
Step 5
Serve kofte with cilantro and fresh vegetables.
