Nengmyeon noodles
Naengmyeon is a traditional North Korean dish, cold buckwheat noodles served with a little beef broth, boiled beef slices and a boiled egg. Separately, sauces go to it: mustard and slightly sweet red pepper sauce.
Ingredients
- beef with bones - 1 kg
- water - 4 liters
- onion - 1 pc
- carrots - 1 pc
- celery - 2 pieces
- black peppercorns / bay leaf to taste
- water - 2 liters
- salt to taste
- sugar - 120 g
- vinegar 70% to taste
- soy sauce - 3 tablespoons or to taste
- dill to taste
- chili pepper - 1-2 pods
- buckwheat noodles -600 g
- radishes -350 g
- cucumbers -350 g
- tomatoes - 4 pieces
- pear -1 pc
- boiled beef - 650 g
- soy broth - 800 ml
- beef broth - 800 ml
- boiled hard-boiled egg -4 pcs.
- chili and green onions for garnish
STEP-BY-STEP COOKING RECIPE
Step 1
Prepare soy broth: dissolve salt, sugar, vinegar and soy sauce in water. Add dill and pepper. Put in the refrigerator.
Step 2
Prepare beef broth. Transfer the beef to a saucepan, add cold water to cover the meat, and bring to a boil. Reduce heat immediately and cook for 5 minutes, collecting foam. Drain the water, rinse the meat under running water.
Step 3
Place the meat in a saucepan, add fresh cold water and bring to a boil again and remove the foam.
Step 4
In a dry skillet, fry half the onion and half the carrots, celery.
Step 5
Place vegetables in a saucepan with meat, add black pepper / bay leaf to taste.
Step 6
Leave the pot on low heat for 2 hours. As soon as the meat begins to move away from the bones, remove from heat.
Step 7
Strain the broth and let cool. Remove the beef from the bones and save.
Step 8
Boil the buckwheat noodles as directed on the package.
Step 9
Cut vegetables, beef and pear into strips.
