Olivier with mushrooms
Delicious salad is an alternative to traditional Olivier. To my taste, I would even say that it is much more interesting than the usual Olivier with sausage or meat. Try it!
Ingredients
- potatoes 2 pcs.
- carrots 1 pc.
- pickled cucumbers 6 pcs.
- chicken eggs 2 pcs.
- champignons 150 g
- canned green peas 3 tbsp
- green onion 1/2 bunch (a)
- vegetable oil 2 tbsp
- quail eggs 2 pcs.
- salt 1 pinch (s)
- lean mayonnaise 3 tbsp
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the carrots and potatoes. I boil the already diced vegetables in a double boiler for 25 minutes. Cool down
Step 2
Wash the champignons and cut into cubes
Step 3
Fry in vegetable oil until light golden brown
Step 4
Cut a couple of mushrooms into slices and fry well for decoration
Step 5
In a bowl, combine: carrots, potatoes, chopped chicken eggs, peas, pickled cucumbers cut into small cubes, fried mushrooms and a pinch of salt. Season with lean mayonnaise (I have Lenten Sloboda) and mix
Step 6
Serve in portions, garnished with quail eggs, finely chopped green onions and mushroom slices
