Pancakes on dough

Classic yeast pancakes are made with dough. To do this, fresh yeast is mixed with a small amount of flour, sugar and water, and allowed to rise; then the rest of the ingredients and most of the flour are introduced - they are allowed to come up for a couple of hours. After that, add the rest of the flour, proteins and bake pancakes. They turn out gorgeous!

Ingredients
  • 20 g fresh or 10 g dry yeast
  • 500 g flour
  • 1 yolk
  • 1 tbsp sugar
  • 3 tbsp. l. butter
  • 600 ml whole milk
  • 2 eggs
  • ghee for frying
  • salt

STEP-BY-STEP COOKING RECIPE

Step 1
Dissolve yeast in 250 ml of warm (37–40 ° С) water. Wait for the yeast to froth. Add half of the flour, stirring occasionally, and put in a warm place for 1 hour.
Step 2
When the dough is suitable, add 3 yolks, pounded with salt and sugar, melted and cooled butter, stir thoroughly.
Step 3
Then, stirring so that no lumps form, gradually add the rest of the flour.
Step 4
Dilute the dough with warm milk until thick sour cream is not very thin, cover and put in a warm place for 1 hour.
Step 5
When the dough rises, stir it to settle, and put it back in a warm place for 30 minutes. Repeat one more time. Add whites, whipped into the thick foam, stir, let the dough rise again and do not stir any more.
Step 6
Bake pancakes.
