Pkhali from beets

Phali is a pasta made from vegetables or herbs, always with the addition of nuts, cilantro and spices. In principle, it is quite possible to distribute it over some pretty container and just take it from there with a spoon, but rolled phali balls look much more elegant.

Ingredients
  • 4 medium beets
  • 100 g shelled walnuts
  • 2 small onions
  • 3-4 cloves of garlic
  • 1 bunch of cilantro
  • white wine vinegar
  • 0.5 tsp. ground coriander and utskho-suneli
  • salt, freshly ground black pepper
  • 1 ripe pomegranate to serve

STEP-BY-STEP COOKING RECIPE

Step 1
Wash the beets with a brush without cutting anything. Wrap individually in foil and bake at 200 ° C until soft, 50 minutes or more. up to 1.5 hours
Step 2
Pour the finished beets with cold water, cool, peel and grate on a fine grater.
Step 3
Prepare a nut dressing - walnuts, garlic, onions, greens through a meat grinder, add spices, salt and pepper, mix thoroughly by hand to get a homogeneous mass.
Step 4
Combine hazelnut dressing and beets. You can add a couple of drops of white wine vinegar for sourness.
Step 5
The resulting mass can be laid out on a dish, leveled by hand and then make patterns with a knife, or roll up identical balls, make a depression with your finger - but in any case, you need to decorate them with pomegranate seeds.
