Pasta with eggplant sauce

A wonderful dish is pasta with aromatic summer vegetables. Leave no cheese and the dish will be vegetarian.

Pasta with eggplant sauce
Ingredients
  • pasta (pasta) 200 g
  • eggplant 1 pc.
  • tomato 1 pc.
  • garlic 4 cloves
  • basil 3 sprigs
  • parsley 3 sprigs
  • green onions 3 sprigs
  • hard cheese (grated) 2 tbsp.
  • chili to taste
  • olive oil 30 kg
  • salt to taste
  • a mixture of peppers to taste

STEP-BY-STEP COOKING RECIPE

Step 1
In a frying pan, fry the eggplant cubes until golden brown. Add garlic, chili and chopped tomato. Simmer for 2-3 minutes. Salt to taste. Add basil and parsley greens a minute until ready.
Step 2
While the eggplant sauce is stewing, cook the pasta (pasta) aldente.
Step 3
Put pasta on a plate, on top - eggplant sauce. Sprinkle with green onions and cheese.
