Raclette with new potatoes, pickled cucumbers and pearl onions

Raclette is a Swiss dish, which, like fondue, is made from melted fat cheese. The first mentions of raclette are found in the monastic manuscripts of the cantons of Obwalden and Nidwalden, describing the nutritious "fried cheese" prepared by shepherds in the Valais Alps. The modern raclette is served with potatoes, pickled cucumbers, mostarda, ham or bacon.

Ingredients
  • raclette cheese (Raclette or any hard spicy cheese that melts well) 350 - 400 g
  • lettuce iceberg - 120 - 160 g
  • pickled gherkins - 80 g
  • pickled pearl onions - 40-60 g
  • c / c bacon - 80 g
  • young cherry potatoes - 400 - 600 g
  • vegetable oil
  • olive oil
  • salt, pepper to taste

STEP-BY-STEP COOKING RECIPE

Step 1
We clean the iceberg lettuce from rough external and damaged sheets. Disassemble into leaves and tear with hands into small segments.
Step 2
Cut cucumbers into cubes of about 1.5-2 cm, onions - in half.
Step 3
We mix all ingredients, add olive oil, salt and pepper.
Step 4
Fry the bacon on both sides in a dry frying pan until crisp, dry on a paper towel to remove excess fat and chop finely.
Step 5
Boil cherry potatoes until tender, cut in half and fry in vegetable oil. Add salt, pepper and finely chopped bacon.
Step 6
Put all the ingredients on a plate, put a layer of melted toasted cheese on top.
