Raclette was once a simple dish popular with Swiss shepherds. Now this dish can be made deliciously festive, if you cook, for example, raclette with roast beef, sun-dried tomatoes and green asparagus and season with truffle oil.

Ingredients
  • roast beef - 320 - 400 g
  • asparagus 160 - 200 g
  • sun-dried tomatoes - 120 g
  • vegetable oil
  • cheese for raclette (Raclette or any other hard, fusible, spicy cheese) - 600 - 800 g
  • fragrant truffle oil
  • olive oil for frying
  • salt, pepper to taste

STEP-BY-STEP COOKING RECIPE

Step 1
We clean meat from films and veins. Rub with salt and pepper and fry until golden brown. Then we bake in the oven for at least 10 hours at a low temperature (the recommended temperature is 52-54 °.). Then cool and cut into thin slices across the fibers.
Step 2
Peel the asparagus from the tough skin at the bottom of the stem, cut into segments. Blanch in boiling water for exactly 22 seconds and place in ice water to preserve color. Then fry in olive oil with salt and perm.
Step 3
Put the roast beef, asparagus and sun-dried tomatoes in a plate, add a couple of drops of truffle oil, and put a layer of toasted melted cheese on top.
